Guest guest Posted October 14, 2000 Report Share Posted October 14, 2000 Hi all, Some of you may remember the recipes I send, but I am only sending them for whatever new people we have here, so I hope you're not annoyed at me. :-) ~Emmy~ Borracha Beans ~~~~~~~~~~~~~~~~ Serving size: 8. 2 cups dried pinto beans 1/2 teaspoon baking soda 1 bottle beer (dark is preferred, but light is okay) 1/2 teaspoon powdered bay leaves (or 2 whole bay leaves) 2 teaspoons Cajun seasoning* 1 teaspoon chili powder 1 teaspoon ground cumin 1 teaspoon salt 3 cloves garlic, minced Soy bacon bits 1 large onion, diced 1 cup chopped green bell pepper 2 jalapeño peppers, seeded and diced (optional) 1/3 cup fresh cilantro, minced, or 1 - 2 tablespoons dried 1) Cover beans with water, and bring to a boil. 2) Turn off heat and allow beans to soak for 1 & 1/2 hours before using, then drain the beans and rinse well. 3) Cover beans with water again, adding 1/2 teaspoon baking soda, and bring the beans to a boil; cook for 2 minutes. 4) Drain beans, and rinse well. 5) Cover beans with 4 CUPS of water; add the beer, and bring to a boil again over high heat. 6) Add bay leaf powder or bay leaves, seasonings, garlic and " bacon " bits; continue to cook at a simmer, covered, for 2 - 3 hours. 7) Add the onions, bell peppers, and jalapeños, and continue to cook for 1 - 2 hours, uncovered, until beans and sauce are to desired thickness. NOTE: You may add additional water or beer during cooking if the beans seem to be absorbing too much liquid and are dry. When beans are cooked, there should be enough liquid to form a thin sauce. Add cilantro, and adjust seasonings prior to serving. *I found the Cajun seasoning to be waay too spicy for me, so to make up for the lack of it, I just put in some jerk seasoning and dried herbs, but you can use what sounds good to you from your collection of seasonings!
