Guest guest Posted October 11, 2000 Report Share Posted October 11, 2000 Vegetarian, Spinach & Miso Pesto This pesto is nice when tossed with cooked pasta or when served with new potatoes. It is also a good spread on toast as an appetizer. 1/4 cup walnuts 1 10-ounce package of spinach, chopped 1/2 cup basil leaves, firmly packed 3 tablespoons extra-virgin olive oil 2 tablespoons miso In a dry skillet, toast the walnuts over a medium heat for about 4 minutes. Combine the walnuts with the remaining ingredients and place in a food processor. Blend until the mixture becomes a rough paste. Serve immediately.
