(ducking the rotton veggies), but eat only fish and rarely chicken, and eat vegetarian very frequently. I invented this quick and easy lowfat recipe, and thought I would share it. Low-fat Eggplant sandwich One small eggplant sliced in circles. 2 egg whites. (you could use the whole egg if you wanted) bread crumbs. non fat ricatto cheese, (I used about 1/2 cup) 1 cup of your favorite commercially prepared marinara/tomato sauce 2-3 TBS of reduced fat shredded cheese. your favorite whole grain bread, sliced Beat egg whites. Dip eggplant circles in eggwhites, and then in bread crumbs, on both sides. Put eggplant in a nonstick pan, sprayed with cooking spray. Cook until brown on medium heat. (Both sides) Put a dollop of the nonfat ricotta cheese on each circle. Cover with tomato sauce. Sprinkle with reduced fat cheese. Cover pan and heat until sauce is hot. Serve circles on bread... season with salt and pepper. Yum.
