Use this for red sauce and no one will notice there is no beef. You would be amazed how the texture is so similar! For Mexican foods such as enchiladas and taco filling I like red lentils. They cook up very easily and are dirt cheap. If making tacos add taco seasoning to the lentils. These are delicious even for meat eaters.
