Hi Maynard, good to see you here!

Here are a few ideas I use at home for fast, satisfying, easy, and

good-for-you-but-doesn't-necessarily-taste-like-it meals:

1) Tortellini with veggies:

Separately cook up the tortellini (boil according to instructions).

Meanwhile, in a pan, stir fry any favorite vegetables (broccoli, carrots,

cauliflower, etc) until tender crisp (always do broccoli last, as it cooks

very quickly). Add any kind of sauce to the veggies (white sauce, tomato

sauce, cream of mushroom soup etc), and season to taste. When the tortellini

are done, drain and add them into the veggies. Sprinkle with Parmesan

cheese. Note: this recipe works well with ravioli, or any type of plain

pasta (rotini is my favorite).

 

2) Nouveau Lasagna:

In an oiled bread pan, alternate layers of pre-cooked lasagna noodles with

finely cut broccoli (and any other veggies you may wish to add) and cheese,

and cover each layer with cream of mushroom soup (first add some milk to the

soup so it isn't too think). Top with Parmesan cheese. In the early spring,

try a new twist with dandelion leaves in there (they are not bitter until

the plant begins to bloom).

 

3) Tortillas with Veggies:

At the grocery store, usually near the refrigerated section where they sell

cheese, you will see tortillas, which are just thin, flat, round bread

pieces. On one tortilla, place chopped fresh veggies and cover with cheese.

Place another tortilla on top and place in oven for 10 minutes at 350

degrees.

 

4) Quick Pizza:

Pizza is quick and easy to make if you already have the crust done. I buy

the pre-made crusts, then just add whatever sauce, fresh toppings, and

cheese, slap it into the oven until the cheese melts and voila!

 

5) Baked Potato with Topping:

To a baked potato, add a topping of broccoli and cheese. If adventurous, try

a combo of tofu, mushrooms, and cheese. You will never miss the sour cream

and butter!

 

6) Toad in a Hole:

(Great one for the kids)

Cut the middle out of a piece of bread (use an upside down glass to press a

circle in the bread), then butter the bread and put it on a hot frying pan.

Crack an egg and pour it into the hole in the bread. When you can lift the

bread without the egg falling out, flip it over once and cap the bread with

the piece of bread that was cut out. That small round piece of bread can

also be buttered and fried a bit for flavor. Serve it so the child (adult?)

can look under the round piece of bread to see the " toad " hiding in the

hole.

 

6) Instant Noodles with veggies :

Bring a pot of water to a boil. Add any harder veggies (like carrots or

cauliflower), the seasoning packet and the noodles to the boiling water.

Cook for about a minute then add the softer veggies (greens, broccoli). Cook

for about another minute (check directions on noodle package). Tip - use

more water for a soup, less water for a noodle dish.

 

7) Dumplings :

Mix Bisquik, milk (see directions on Bisquik box for amounts) and 2 eggs in

a bowl. Bring to boil a large pot of water, add 2 cubes of veg bullion and

stir. Spoon in the Bisquik batter. Let simmer uncovered for 10 minutes, then

cover and simmer another 10 minutes. Throw in the veggies during the last

1-2 minutes of cooking.
