Black Olives

About keeping black olives~~

I have no problems with freezing them - I just put what I

don't use into a freezer bag and squeeze out the air before

zip-locking.

Another thing that I do is to put them into an empty jar of

green olive liquid and that keeps them, too. Or you can

make your own liquid by mixing olive oil with your favorite

flavor of vinegar.

PS - I eat cheeses, too - also, eggs and other dairy

products and feel no guilt although I respect a vegan's

right not to eat them.

We never have black olives left! Between my 2 yr old son and me, we scarf 1/3

of a can down while cooking dinner. We also use them in:

 

salads (duh, huh? :)

bean mixtures (try chickpeas, mashed potatoes, garlic, and black olives in a

blender)

casseroles

quesadillas.

 

Basically, I throw whatever I have open in the fridge into whatever I'm

making.
