One quick tip....I use a lot of meat-based recipes that call for ground beef and substitute TVP or frozen/thawed tofu. The tofu is a great little trick for making crumbles to add to casseroles and chilis. I freeze a block of tofu for about 24 hours and then let it thaw it room temp. The freezing completely changes the texture and the block of tofu looks like a sponge. I then squeeze out the water and have tofu crumbles, which I season and add to things. We even season them with taco seasnings for tacos and buritos for a change from beans. I then make chilis, casseroles etc. following the regular directions, but adding the tvp or tofu crumbles. I also found a very useful site on oamvc and have tried several of their recipes. I've only had one recipe from there that was a bust....crockpot mac & cheese...tasted good, but it got too mushy.
