Guest guest Posted September 11, 2000 Report Share Posted September 11, 2000 Vegetarian Patties Parmigiana 4 meatless chicken-alternative patties (see note) 4 thick slices mozzarella cheese 2 cups marinara sauce, heated, divided 1 (16-ounce) package capellini, cooked, drained 1/4 cup freshly grated Parmesan cheese Heat patties according to package directions. Add cheese slices and cover. Heat until cheese melts. Meanwhile, mix 2/3 of marinara sauce with capellini and divide among 4 serving plates. Add 1 cheese-topped patty per plate. Spoon remaining sauce over each patty. Sprinkle with Parmesan and serve. Makes 4 servings Note: Recipe was tested with Morningstar Farms Chik Patties (vegetable and grain protein).
