Vegan Microwave tea loaf ************************ 300 g(10oz)Mixed white and dark raisins(sultanas and raisins to us Brits)and chopped glace(candied)cherries 200ml(8fl oz)strong tea. 125g(4oz)Carob " chocolate " or vegan chocolate 175g(6oz)self raising flour 1 banana ,well mashed. Method ****** 1)in a bowl suitable for the microwave(non metallic etc)mix together the fruit and the tea.Cook on " re-heat " for 7 minutes. 2)Break up the Carob (or vegan chocolate) into small pieces and put into the mixture until it has melted. 3)working quickly,beat in the flour,sugar and banana to the mixture. 4)Spoon the mixture into a suitable microwave cake dish.Place in the microwave on an upturned plate and cook on " high " for 7 minutes.If your microwave does not rotate automatically then rotate by hand every 2 minutes. 5)Allow the cake to stand for 5 minutes. 6)Turn out onto a cooling rack Quote Link to comment Share on other sites More sharing options...
