Guest guest Posted September 2, 2000 Report Share Posted September 2, 2000 hi there, you can make really easy chicken salad, vegan style, by substituting the chicken with any soy or wheat chicken product out there. there is morningstar farms chik nuggets and patties which are breaded and can be found at most major food stores, and if you venture out to the health food store, you can find chicken breasts, shredded chicken, and chicken cutlets in the freezer section, refrigerators, and also in the dry boxed mixes. i like a product called chik'n'wheat, which is a boxed mix you make into a dough and boil. there is also a great chicken flavored seitan that comes packages like tofu in water, i use it for salad and as chicken in soup and casseroles. simply use any of them like chicken, and then if you want a traditional salad, use nayonaisse, a vegan mayo, or make a mayo substitute with silken tofu. i also make a lot of tuno salads with tuno, a canned tuna style soy product. i mix it with nayonaisse and add the usual to unusual, depending on my mood: celery, scallions, grapes, whatever. also try variations on the spices you add: curry chicken salad is great, or basil, cilantro, ect. happy cooking! ps you may want to go to www.about.com and enter vegetarian in the search box. i have found that search engine to be the most informative for recipes, as well as relevant issues for the veg-heads out there. - " Jay and Laurel Silvio " <silvio Saturday, September 02, 2000 3:59 PM Re: (unknown) > > I just had a vegan " ckicken salad " sandwich with textured soy...there was > other stuff in it too. it was really good. anybody have a recipe? > thanks. > > laurel > > > > > contact owner: -owner > Mail list: > Delivered-mailing list > List-Un: - > > no flaming arguing or denigration of others allowed > contact owner with complaints regarding posting/list > or anything else. Guest guest Posted September 3, 2000 Report Share Posted September 3, 2000 my favorite thing to make a veggie chicken salad out of is a brand called Veat (check out www.veat.com )....i just fry it up in a nonstick pan to brown it, after cutting it into little chunks..i then add seasoning (my favorite being pasta seasoning from spice islands)...then i add enough veganaise to make it salad like, then i chill it! i also like making "turkey" salad sandwiches using a tofurkey, they are expensive so it is a special occasion thing only...i just cut up the tofurkey into small chunks, add spices, mayo, and chill! -cherrie "I have from an early age abjured the use of meat, and the time will come when men such as I will look upon the murder of animals as they now look upon the murder of men."
