Guest guest Posted August 22, 2000 Report Share Posted August 22, 2000 Hi - I'm new to the list. I've been vegetarian for a while, but I haven't eaten very well due to an aversion to cooking. Lately I've been doing some more cooking, though. My partner is also vegetarian, so that helps. I have seen some interesting recipes on this list, and I was wondering if anyone had experience with a recipe for: 1)a really yummy potato salad that's not too mayonnaise-y. Or other interesting potato dishes. We love potatos! and/or 2)a good stuffing recipe. This is the one thing I miss from my non-vegetarian days. My mother's recipe has chicken broth in it. I have tried making the same recipe with vegetable broth, but it didn't taste like stuffing. This may have had to do with the case that my mother is a much more experienced cook than I, but maybe I just need to find a real veggie stuffing recipe instead of trying to use a nonveggie one and converting it to veggie. Thanks! Also, on the subject of grilled cheese sandwiches...here's my favorite variation: 2 cups of chopped mushrooms 1/2 onion (yellow or sweet) 1 whole clove garlic (chopped or smashed) 1 Tbsp olive oil 1/2 Tbsp roasted or dark sesame oil some sesame seeds Fry onion in olive oil until transparent. Add the rest of the ingrediants and fry until mushrooms are soft and fragrant. Put in a strainer for a little while to drain the excess oil away. Put two heaping spoonfuls onto a freshly grilled cheese or soy-cheese sandwich. Mmmmm....tomato slices on top of that are good, too. The whole process takes less than 15 minutes. I've been know to serve this with a side salad for dinner because I'm a lazy cook and I like my food fast. I found an instant vegetarian stock in our local bulk food store that tastes like chicken broth, but is entirely vegan. Maybe there's one near you? I wonder if it would work.. let me know, please? I miss stuffing too! As for potato recipies... I missed my mothers chicken stew so much after I stopped eating meat, I figured out how to make it using lentils, instead of chicken. Lentil Stew 3(or more, if you like) medium sized potatoes, peeled and cut into bite sized pieces 1 large carrot, peeled and sliced 1 medium onion, chopped (bite size pieces) 1 can green lentils, drained and rinced (or start with 3/4 to 1 cup dried, then cook them before you start the stew) 3/4 (or more) cup frozen corn water to cover 1 tsp prepared mustard 1 tbsp instant veggie stock 1 tbsp poultry seasoning 1 tsp dried ground sage 1/4 cup snipped chives 1 tbsp each dried parsley and basil salt and pepper 1:3 ratio flour to water for thickening (if desired - I use 1 heaping tbsp flour to three or four tbsp water) (* all spices are to taste, as usual, and since I don't measure anything when I cook, I THINK these are conservative measurements... start with these and add more of what you like as you go along. Place potato pieces in a pot and cover generously with water (a soup pot should be about 3/4 full). Bring to a boil, then add the carrot pieces and chopped onion. Cook until everything is soft, at a gentle boil, about 5-7 minutes (just stab them with a fork... honestly, I don't time or measure anything! Sorry!), then reduce heat. Add cooked/rinced lentils, corn and spices. Simmer for 10 minutes or so, until everything is heated and melded together nicely. Thicken now with flour and water if desired, and cook ten minutes more. At this point you can serve the stew, but if you let it sit for an hour or so, it gets even better. Goes great with bread and butter! Lots of protien in this one! Lentils, if done right, can be lovely (I've apparently done them " wrong " many times, but when I have gotten it right, they're great). I'll try the vegan " chicken " broth and see if it works.
