Hello Everyone!

I've been on this list for awhile, but haven't posted yet. First I wanted to

say that I have really been enjoying all the great practical advice and

recipes offered by the group.

My name is Christine and I live in New Jersey. I am not a full vegetarian

yet, but have been working towards that goal for a long time. I'll spare you

the sordid details about that though! I do want to say that I really admire

the folks who stick to their convictions, be it health, religious or

humanitarian concerns and really live & promote the vegetarian lifestyle

fully.

I myself do not like to cook and I tend to be very lazy about learning. My

husband used to cook professionally and he is kind enough to make the bulk of

our meals -- but he is a big meat eater. I also came from a big meat eating

family too, although both of our families tended to switch to more chicken

and fish and less beef during the 80's.

Most of my friends don't realize that I do not like to eat meat because they

all know I love pasta and I still eat seafood on occasion, which make me feel

very guilty -- but I'm working on it. I am also trying to cut out eggs and

milk products. I rarely drink milk anyway. I usually use milk, eggs &

dairy as fillers in recipes because I'm too lazy to learn to use the tofu

correctly! Anyway, my family knows I'm trying to cut out meat and they are

pretty supportive. I wish everyone was that way! I'm sure you all know what

it is like to have people ask you crazy questions about your eating habits!

So, if anyone out there wants to e-mail me on or off-list with tips on any

aspects of converting to a full vegetarian, living with a meat eater and more

time saving tips, please do!

Here's what I'm eating now: brown rice flavored with some salt, pepper &

oregano, combined with mixed frozen veggies and topped with cut up pieces of

Garden Burger (the original veggie kind - can't eat the hamburger tasting

type)! This is delicious!

Thanks,

Christine
