I often eat this one for dinner, too... ) Amy Mexican Bean Dip 1 16-oz. can refried beans 1 8-oz. pkg. cream cheese, softened 2 c. shredded sharp cheddar, colby or cojack cheese Beat cream cheese and beans together with mixer. Line square baking dish with 2 layers of foil for easy cleanup, and pour mixture into pan. Sprinkle liberally with cheese and bake at 350 degrees for about 30 minutes. After someone tries the alternative suggested by purplepassion thelilacflower to let us know how it comes out and likes it enough to send it back, then I will add it to our files. Here is purplepassion's suggested recipe (cheese replaced by nutritional yeast): Mexican Bean Dip (great for the holidays) 1 can black beans, drained (1 lb can) 1 can refried beans (1 lb can) vegetarian version 1/2 cup medium salsa 6 green onions chopped, including tops 1 small can mild Ortega chiles, chopped 1/2 cup nutritional yeast flakes Place all in crockpot, set on low for 2 hrs. before ready to serve with chips on the side. Watch this disappear fast!. / Another option is to replace the cheese with one of the low fat cheez recipes in our group's faux files. Okay, everybody, begin cooking and give us a nice tasty tried and true slimming version of the recipe.
