Guest guest Posted July 31, 2000 Report Share Posted July 31, 2000 Marinade for tofu I tried it last night and liked it a lot: 1/4 cup apple cider vinegar 1/4 cup maple syrup (I used brown sugar instead) 1/4 cup olive oil 1/4 cup soy sauce 2 Tblsp ketchup 1 Tblsp dijon mustard 2 garlic cloves finely chopped (or some garlic powder) 6 ouces apple juice some pepper if you like Use extra firm tofu. Slice a little thiner than 1/2 inch. Put the tofu slices on one layer in a cookie sheet, and add the marinade. The longer it marinates, the better it is (overnight is best). Then bake the tofu without the marinade at about 400 degrees for about 20 minutes. Flip the tofu and bake for another 15 minutes or so (longer for harder tofu, less for soft tofu). I could only marinate it for a couple hours, so I cooked the tofu with the marinade for about 20 minutes, then I drained it and broiled it to get it a little crispy on the edges. While baking, I sprinkled quite a bit of nutritional yeast on it too, and it was delicious. We used it for sandwiches, but it would also be good as it is, served with some leftover marinade on top.
