Guest guest Posted July 31, 2000 Report Share Posted July 31, 2000 POTATO DINNER ROLLS (Great for using up one cup of leftover mashed potatoes) In a cup of warm water, add two packets (or 4 Tbs) of dry yeast. Stir to dissolve and set aside. In a small bowl: 2 cups flour 1 cup sugar 1 Tbs salt In a large bowl: 3/4 cup of vegetable shortening or butter 1 cup of mashed potatoes 2 eggs Mix together the contents in each bowl separately, then combine the contents of the small bowl with the large bowl. Add 1 cup of warm milk and the dissolved yeast and work into the dough. Let rise until double. Add 1 cup of flour and knead for 5 minutes. Form into rolls, arrange on a cookie sheet, and allow to rise again. Bake in a 350 degree oven for 10 to 12 minutes. Serve with lots of butter!!!
