Guest guest Posted July 31, 2000 Report Share Posted July 31, 2000 TROPICAL BEANS AND BROWN RICE 1 cup of dried Red Kidney Beans 2 cups brown rice 2 Tbs of oil, butter, or margarine 1 medium onion, sliced 1 clove garlic 1 cup coconut milk 4 cups water (or more coconut milk) Salt and pepper to taste Soak beans until double in size. Boil until tender with the garlic. Add 1 cup of coconut milk, onion, and seasonings. Cook until the liquid is thick. Bring the 4 cups of water or additional coconut milk to a boil. Add oil, a pinch of salt, and rice. Cover, reduce to a low heat and cook until the liquid is absorbed, about 30-35 minutes. Put the cooked rice and beans together in one pot and mix thoroughly.
