Add a thin layer of well-rinsed, cooked black beans. (Other layer options include sweet corn or sliced jalepeno peppers.) Pour in the rest of your batter and bake. Or try BREAKFAST CORN BREAD. Cut leftover cornbread into thin slices and toast in a hot frying pan.
