Guest guest Posted July 27, 2000 Report Share Posted July 27, 2000 Unless it's silken tofu (like Mori-Nu which comes in a non-refrigerated pack), I've never had a problem with my tofu coming out slimy! Silken tofu and tofu tofu are two entirely different cooking entities. Silken is very soft and falls apart easily. It has a very smooth texture, soewhat like firm yogourt. Tofu tofu will always come refrigerated, is much firmer and you can crumble it with your fingers into little " grains " that vaguely resemble ground meat. Which are you using? Guest guest Posted July 29, 2000 Report Share Posted July 29, 2000 Hi, Silken tofu is great for making sauces, dips, puddings, smoothies, vegan cheesecakes, flans, quiches and egg-like dishes. But it's pretty much useless for stirfrying, grilling and using in salads. My experience with trying to press the water out of it has also been dismal. The refrigerated, non-silken, tofu can often be found in grocery stores near the vegetables, or sometimes in with the deli meats and cheeses, or refirgerated salad dressings and dips. I find it so much easier for every day use than the silken. Most commercial packets are good for about 4 to 6 weeks. If you're buying from an asian grocery store (the next place to look if you can't find tofu at the grocers), you should use it within a few days. The asian tofu is also nicer though, becasue it's fresher.
