Hopefully he won't mind me sharing one of his breakfast menus (and one of my personal favorites)- but I think he also would very much like to spread his philosphy arund a little. From Garden Cuisine, Paul Wenner, 1997 Simon & Shuster Fresh Fruit Toss (or Very Strawberry Smoothie (kid's favorite!!) Mighty Multigrain Cereal Almond, Rice, or skim milk (where included, use 1/2 cup of the lowest fat product available) Cool water with fresh squeezed lemon or Lime. Fresh Fruit Toss: (anything fresh from the produce aisle - organic if possible, lots and different!fruits, berries, melons, grapes - you get the idea, now comes the fun part...) " Chop enought fruit so make at least a 1 cup serving/person. A minimum of three fruit combinations is recommended for healthy eating. This is one of two key sources for getting fruits in your menu every day. The other is a delicious fruit smoothie. The more variety the better, since every fruit offers many nutrients and much needed phyto (plant) chemicals in varing amounts. Very Strawberry Smoothie (3 servings) 2 cups bananna chunks 2 cups frozen or fresh strawberries 2 tblspns unsweetened (thawed from frozen) apple juice concentrate or 1 cup unsweetened apple juice, or 2 apples, peeled,cored and chopped. Ice cubes Place everything in a blender and process on high unil thick and smooth. Mighty Multigrain Cereal (tons of fun, I can't eat cold cereal any other way now...) Makes 5-1/2 pounds, use lots of gallon zipper bags and throw excess into freezer) 1-10 oz. box New Morning Honey and Almond Oatios 1-11.25 oz. Multi Grain Cheerios 1- 20oz box Kellog's Low Fat Granola 1-16.5 oz box Kellog's Raisin Squares 1 box Post Grape-Nuts (get the cookbook if you can't find these cereals, it lists many others that may be substituted - the thing is LOW FAT, LOW SUGAR, generally good-for-you, crunchy, lots of textures and flavors, totally fun and filling - one bowl, not the whole bag) Combine all of the cereals in a large plastic bag and mix completely. (this breakfast will send you off with a smile in your shoes and tummies!! amen. Again, this is a wonderful, little cookbook, made for the real simple cooks in all of us - all vegetarian, utterly tasty and even the kid likes most of the recipes which is worth the price alone!
