Guest guest Posted July 1, 2000 Report Share Posted July 1, 2000 So, a recipe that you can stuff your face with and not feel guilty: Summer salad -1 15 oz can (2 cups) pinto, white, red beans (or any mild flavored beans) -small head green lettuce in bite-sized pieces -a few pieces of leaf spinach, also in pieces -1scallion, chopped -1 small or 1/2 large green bell pepper, chopped -4-6 fresh sprigs parsley, chopped -- important, not optional -1/2 to 1 cup fat-free cottage cheese -2-3 Tbsp yellow prepared mustard -1 Tbsp cider or balsamic vinegar -salt and pepper Toss and serve. Makes 2 meal-sized servings, or 4 side servings. I like it strong, and add a lot of mustard.
