I often eat my pasta with just a tomato/cheese/onion/mushroom sauce on it - with hot buttered toast on the side and a glass or two of milk - may not be " nutritious enough " for " every meal every day " fare but in the all-around scheme of things, I would think that it would be just fine for a full meal. Add some fruit for dessert, if Mom insists! <LOL> My mom used to be a hospital dietician and is very conscientious about EVERY meal being a properly balanced meal - but other schools of thought believe that the balance can be achieved over a period of time - in fact, I have a French penpal who says that the " French " way of eating is to emphasize a different food group EACH DAY!!!
