I mean, the serving sizes don't offer enough, in my mother's (a nutritionist) humble opinion, and adding beans would make it more filling, too, but this could make a nice side dish as is. ~Emmy~ From " Eating In Eden " by Hermine Freed Penne With Cheeses and Sauce ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Makes 4 servings. 6 ounces penne pasta 1 small red onion, chopped 5 cloves garlic, minced 1 tablespoon oil 1/4 pound mushrooms, sliced 2 large tomatoes, cut into 1/2-inch squares 1/3 pound mozzarella 4 tablespoons Parmesan 1/4 cup chopped basil 1 tablespoon chopped oregano, or 1 teaspoon dried (optional) 1) Boil the penne in 2 cups of water until al dente. 2) Saute the onions and garlic in the olive oil until transparent. 3) Add the sliced mushrooms, and cook for another two minutes, stirring. 4) Add the tomatoes and simmer until soft and moist. [if the tomatoes aren't juicy enough, add a little water or tomato puree.] 5) Put the penne in a casserole dish and add the sauce. 6) Chop the mozzarella and all but 1 tablespoon of the basil, and stir in well. 7) Sprinkle the top with the Parmesan. 8) Bake in a 350 degree oven for about 15 minutes. It should be bubbly, but not burned or dry. We cook this, well similar, at our house and use it as a part of an antipasto platter - Loads of pepperoncini, cherry peppers, little sweet pickles, tomatoes, olives, dressed salads, white bean salad, garlic toast - kid ADORES IT!! gets your protein and LOADS of texture and flavor!!
