But how, exactly, do you make them? Here are two different possibilities--one a little spicy, the other slightly sweet. Both are breaded with cornmeal and quickly fried in a little olive oil. They're best served hot but are also good cold. Quantities are all up to you, so it's tricky to give a nutritional breakdown. However, a large green tomato will have about 43 cal, .4 gm fat, 0 mg cholesterol, 9.2 gm carbohydrates, 2 gm fiber, 2.2 gm protein, 23 mg sodium. Spicy Version: Green tomatoes, sliced Tabasco sauce Cornmeal Olive oil, for frying Sprinkle Tabasco sauce lightly over tomatoes; marinate a few minutes. Bread tomatoes with cornmeal. Brown on both sides in oil; drain on paper towels. Sweet Version: Green tomatoes, sliced Salt and pepper, to taste Brown sugar, to taste Cornmeal Olive oil, for frying Sprinkle tomatoes with salt, pepper, and brown sugar to taste.
