Tanaista enjoy...starts off with sandwich ideas, goes to links, then magazines, then feeding kids book and link info, and then 2 more quick things for lunch or breakfast -From the archives " The Vegetarian Lunchbasket " book? I thought you might like >it for the kids. Some thoughts (not from the book) are a sandwich with >walnuts, cream cheese and apple slices on pumpernickel bread, or a cream >cheese sandwich with asparagus pre-cooked). Also, my food store sells >different flavored humus that I enjoy. -there was also several recommendations for the Vegetarian lunch box -Tanaista Snack my ex used to eat and I got from my sister years ago 1 slice Wheat bread 1 half avocado spices or salt to your taste Peal the half of the avocado and take the skin off...spread it like peanut butter on the bread...sprinkle the herbs, salt whatever one it and eat....also recommend brief broiling or toaster oven to heat it... is an excellent quick snack for adults or kids...little fatty but very healthy and yummy > sandwich suggestions cashew butter and sliced peach cheese coleslaw and caraway seeds banana honey and flaked almonds apple butter w/ raisins or banana (I love apple butter, peanut butter, banana sandwiches) apricot jam banana slices and walnuts cooked lentils mashed with onion and curry powder mashed banana , grated carrot, sprinkling of coconut cream cheese and lightly crushed strawberries walnut bread by diamond is wonderful for sandwiches A quick easy sandwich for you... Baguette (thin loaf of French bread) Mozzarella cheese Sun dried tomato Tomato Fresh Basil Slice a baguette in half. On each side of the baguette, ,place slices of tomato, some fresh basil leaves, a few thin slices of sun dried tomato and one or two slices of Mozzarella cheese. Broil in your toaster oven for a few minutes until the cheese is melted. Mmmm! They come out quarterly. The recipes are " regular food " and not super-fancy nouvelle cuisine (which turns my family off). Very few expensive or hard-to-find ingredients. A fair selection of vegetarian meals, too. a cookbook that's full of quick and easy recipes. It's called " Athlete's Kitchen " and is written by Nancy Clark. The book is written for athletes who wish to improve their diet. Van Domelen, Wildwood Resources Inc., 1989. 2 lunches from the archives My favorite lunch is a whole wheat tortilla, a smear of eggless Mayo, sliced up red bell pepper, cucumber, avocado, tomato, lettuce, sprouts,....etc. Get a big tortilla!! Or two!! Sometimes I use salad dressing and have a salad on the run. two very quick related Date Shake 1 1/2 cups almond milk 2 frozen medium bananas 6 large dated, fresh or frozen, seeds removed Place milk and fruit in a blender. Blend until thick and creamy. If you like a thinner shake use 1 1/2 bananas. (I like to add ice too.) Almonnaise 1/2 cup raw almonds 1/2 to 3/4 cup water or soymilk 2 rounded tsp. soy powder ( optional) 1 tsp. nutritional yeast scant tsp. garlic powder 3/4 tsp. salt-free seasoning or seasoned salt 1 - 1 1/4 cups safflower or sunflower oil 3 tbs. lemon juice 12 tsp. apple cider vinegar Cover almonds with boiling water and allow to cool slightly. Slip off skins. Have all ingredients handy. Place almonds in blender or food processor and grind to a fine powder. Add half the water or soymilk along with the soy powder, yeast, garlic powder, and seasoning. Blend well, then add the remaining water or soymilk to form a smooth cream. With the blender running on low, drizzle the oil through the whole in the blender lid in a thin stream until mixture is thick. Keep blender running and add lemon juice and vinegar. Blend on low for 1 minute longer, to allow mixture to thicken to desired consistency. Refrigerate tightly sealed; this will keep 10 days to 2 weeks in the refrigerator. Yields 1 1/2 to 2 cups.
