CALI CURRY

 

One head of cauliflower, cut in 1-2 inch chunks

 

4-5 or somewhere around 5 cups, peeled potatos or the

kind that ya don't have to peel like small red pototos

etc.

 

I yellow onion diced

 

1-3 cloves peeled minced garlic (we add 6 since we

LOVE

garlic )

 

I can coconut milk

 

1/2=1 cup home made yogurt milk or soy type

 

1-2 Tablespoons curry powder (I make my own)

 

Either use PAM etc or 1-2 Tablespoons Olive oil

 

 

I steam the Caulifower about 5-8 minutes, then the

potato until slightly tender. Time varies depending on

your stove. (How's that for a cop out LOL?)

 

Saute diced onion until golden then add garlic and

saute for one minute. Do not let this burn folks ! LOL

 

Ok now add dained cauliflower and the potato and and

mix well with the onion and garlic. Then add the

coconut milk and yogurt and cook until hot on a medium

heat. Add curry and then peas and when peas are heated

thru (about 3 minutes) serve over basamati rice.

 

I usually have a bowl of fresh mixed fruit like

bananas apple melons and grapes.

I also make it with diced hard squash like acrorn

peeled and diced and the pototo. Deleting the peas and

cauliflower, but otherwise the same recipe.

Look I am not a rocket scientist and had to look the

word potato up as Dan Quayle has me flustered even

after all these years. LOL
