But thanks to two kinds of mushrooms, it has lots of flavor and is appealing to the eye. Serve as a first course with a chicken-like, tofu or fish entree. Serves four. Per serving: 48 calories, 1 gram fat, 5 grams protein, 4 grams carbohydrates, trace cholesterol, 486 milligrams sodium, 1 gram fiber. 3 cups fat-free vegetable or chicken broth (canned is fine) (onion or leek soup sounds good) 1 8-ounce can button mushrooms, drained 1 6-ounce can straw mushrooms, drained (I would like some wild mushrooms or shitakes in it myself - Tanaista) In a medium saucepan, heat broth to boiling.
