Guest guest Posted April 5, 2000 Report Share Posted April 5, 2000 Lacto Ovo...though easy substitutions for the milk and butter...and we went through several egg substitutions just recently...use your favorite...I couldn't say which worked better on here, though the ones that sound best to me were 1) the half banana per egg, 2) 1/4 cup applesauce though I think that they would need a bit of baking powder with them...depending on the desired flavor the prune puree or the tofu would also work...but again you would defiantly need the baking powder with both of those ( a bit of vinegar can help the baking powder or soda react better) Tanaista I Love Lemon Quick Bread From www.bigelowtea.com Ingredients: 1/2 cup milk 5 Bigelow I Love Lemon ® Herb Tea Bags 1-1/2 cups all purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 1 cup granulated sugar 1/2 cup butter (1 stick) at room temp. 2 large eggs 1 teaspoon lemon rind, grated 1/2 tablespoon poppy seeds (optional) Yields 4 " x 9 " loaf. Instructions: 1. Combine milk and tea bags in a small saucepan. 2. Heat over medium/low heat until bubbles form around edge, stirring occasionally. (Do Not Boil) 3. Remove from heat and let cool (15-20 minutes); remove tea bags, squeezing out liquid. Set aside. 4. Preheat oven to 325 degrees F. Grease 4 " x 9 " loaf pan. 5. In large bowl, combine flour, baking powder and salt. 6. In a separate bowl, cream together sugar and butter. Add eggs and mix until smooth. 7. Alternate adding tea-infused milk and flour mixture; stir after each addition. Add lemon rind and stir until well blended. 8. Pour batter into pan. Sprinkle poppy seeds evenly on top, if using.
