Guest guest Posted March 9, 2000 Report Share Posted March 9, 2000 Hi, I have a question about this recipe from the Vegetarian Times Cookbook: FRUITY BRAN MUFFINS 1 1/4 c ww flour 1/2 c oat bran 1/4 c wheat bran 2 tsp baking powder 1 tbsp oil 2 med mashed bananas or 1 c blueberries 1/4 c honey 1 beaten egg 2/3 c milk 1/2 c applesauce 1/2 tsp vanilla Combine dry ingredients. In another bowl, mix the oil and honey. Add other ingredients and mix. Blend dry and wet mixtures. Fold in fruit. Spoon into greased muffin tins at 350F for 20-30 min. My questions are... since it already calls for bananas and applesauce, is it really necessary to put an egg in as well? Also: for making egg substitutes with flax seeds - do ground up flax seeds keep well? Should I freeze them? One thing I do that seems to be working real good for helping cakes rise, is I add one teaspoon baking soda and 1 tablespoon vinegar. In this recipe, I would mix the vinegar with the milk. Sour milk usually gives a nice light texture to cakes and muffins. Good luck! Thanks for the recipe, it looks real good. I never tried the flax seeds myself, so I don't know how to use them, but I'd like to know and try it some time...
