You can even use canned mangos, though they are lesser quality. mangos are not available everywhere fresh, still good with canned. My brother-in-law is a chutney fanatic, so I have taken this recipe from his little chutney book. 2 cups mangos--chopped 1/4 cup raisins 1/2 cup dried apricots--chopped 1/2 cup walnuts--chopped 1/4 cup sugar 2 tablespoons onions--chopped 2 tablespoons water 1 tablespoon cider vinegar 1 tablespoon ginger--chopped 1 teaspoon turmeric 1 tablespoon jalapeno pepper--minced 1 clove garlic--minced In a saucepan, combine all of the ingredients and bring to a boil over medium heat. Be sure to stir often if not constantly--you want to be careful not to burn anything here. Once the mixture boils, reduce the heat and simmer uncovered until it thickens.
