Hi,

Great mango chutney recipe. That goes very well with curry and other

Indian dishes. You can even use canned mangos, though they are lesser

quality. mangos are not available everywhere fresh, still good with canned.

TODAY'S RECIPE: MANGO CHUTNEY--VEGAN

 

 

Charlotte sent in a request for a mango chutney recipe. My

brother-in-law is a chutney fanatic, so I have taken this recipe from

his little chutney book.

 

2 cups mangos--chopped

1/4 cup raisins

1/2 cup dried apricots--chopped

1/2 cup walnuts--chopped

1/4 cup sugar

2 tablespoons onions--chopped

2 tablespoons water

1 tablespoon cider vinegar

1 tablespoon ginger--chopped

1 teaspoon turmeric

1 tablespoon jalapeno pepper--minced

1 clove garlic--minced

 

In a saucepan, combine all of the ingredients and bring to a boil over

medium heat. Be sure to stir often if not constantly--you want to be

careful not to burn anything here.

 

Once the mixture boils, reduce the heat and simmer uncovered until it

thickens. This usually takes about 20 minutes.
