Guest guest
Hi all! Okay, I did it... *sigh*... I broke down and tried tofu IN something. Hee hee! Well, I can't say it was the most delectable experience (the texture was a little off), but I couldn't even tell the tofu was in there! It blended in so well! Here's the recipe I tried it in. I won't make it again `cos it just doesn't suit my idea of the perfect-textured burger, but I'm sure some of you may enjoy it. This is one of the recipes I got off of my Cookbook Wizard download. :-) Veggie Burgers Cuisine: American Category: legume Serves: 4 8 ounces firm tofu 1/2 cup chopped carrot 1/4 cup chopped green onions 1 teaspoon fennel seed 1 teaspoon paprika 1/4 teaspoon ground ginger 1/4 teaspoon pepper 1 & 1/3 cups soft whole grain or white bread crumbs 3 egg whites 2 tablespoons chopped fresh parsley 1/2 teaspoon Worcestershire sauce Yield: 6 burger patties. 1) Heat oven to 425 degrees. 2) Grease a 13x9x2-inch pan 3) Place tofu, carrot, onions, fennel seed, paprika, ginger and pepper in a blender or food processor, cover, and blend for about 15 seconds or until smooth. 4) Add remaining ingredients, cover, and process about 10 seconds or until smooth. 5) Shape mixture by about 1/2 cupfuls into 6 patties. 6) Place in pan, and bake uncovered about 14 minutes, turning patties after 7 minutes, until brown. They held together REALLY well. I was surprised. :-) By the way, if anyone has any really good veggie burger recipes, I'd really love them because I've been searching for the PERFECT veggie burger recipe for ages and can't seem to find any that will actually stay in the form of a patty and taste good at the same time. Hehe. Happy vegging! ~Emmy~ ____ Get Your Private, Free Email at http://www.hotmail.com
