Hi everybody!

 

The reason I put " cake " in quotes is that I don't know if I made this wrong,

but it turned out more like a rich brownie than a cake. Sure, I had cooked

it 15 minutes longer than it was supposed to, but that was because when I

did it at the original cooking time it seemed like it was still underdone.

But I don't know why it ended up like brownie. At any rate, it's really

yummy, and substitute as necessary, vegans.

Fudge Cake

Serving size: 24 cake squares.

 

 

1 cup butter, softened

2 cups sugar

4 large eggs

1 cup all-purpose flour

1/4 cup cocoa

1 teaspoon vanilla extract

2 cups milk chocolate morsels or semisweet chocolate morsels

1 cup chopped pecans or walnuts

 

1) Beat butter and sugar at medium speed with an electric mixer until

creamy.

2) Add eggs, one at a time, beating until blended after each addition.

3) Stir together flour and cocoa, and gradually add to butter mixture,

beating at low speed just until blended after each addition.

3) Stir in vanilla.

4) If desired, fold in milk chocolate morsels and nuts.

5) Pour batter into a lightly greased 13 x 9-inch pan.

6) Bake at 350 degrees for 22 to 25 minutes or until a wooden

toothpick inserted in center comes out clean. Cool slightly in pan

on a wire rack. Cut into squares, and serve warm.
