I could eat it until I wipe out an entire week's worth of exercising. Please, don't you do that, but do enjoy these sandwiches. They should be enjoyed in moderation. 2 tablespoons butter 4 large mushrooms, sliced 2 medium shallots, minced salt and pepper to taste 4 ounces Brie, cut into 1/8-inch thick slices 8 slices of wheat bread with the crusts removed 1 teaspoon tarragon In a skillet, melt the butter over a high heat. When it begins to brown, add the mushrooms. Saute the mushrooms until they have browned around the edges. Should take about 3 minutes. Add the shallots and cook for about one more minute. Transfer this mixture to a plate and season with the salt and pepper. Place cheese slices on the bottom sandwich bread slices and top them with the mushroom mixture. Add the tarragon and cover with the other slice. Heat a skillet over a low heat for about 10 minutes. When ready, grill the sandwiches until the bread is lightly browned and the cheese is melted.
