Guest guest Posted February 11, 2000 Report Share Posted February 11, 2000 TODAY'S RECIPE: APPLESAUCE COOKIES--VEGAN These cookies come out chewy and delicious, and you can whip them together in an instant. What's even better, they don't require any flour. If you have homemade applesauce, by all means use that, but don't hesitate to use store-bought applesauce. 2/3 cup packed brown sugar 3/4 cup vegetable oil 1 teaspoon vanilla 1/4 teaspoon salt, optional 1 cup applesauce, unsweetened preferably 1/2 cup pecans, chopped 4 cups quick-cooking oats 1/2 cup dates, chopped In a large bowl, beat together the brown sugar, oil, vanilla, and salt. Mix in the applesauce, pecans, oats, and dates. Drop cookies (size is your choice, I usually use a rounded tablespoon) onto a greased or nonstick cookie sheet.
