All the taste comes from the veggies themselves, so try organic for this one (I know they can be expensive). Cut some potatoes into 3/4 " cubes. If they are new or " new-ish " you don't need to peel them first, just scrub them well. Put into a pot of boiling water. Now, while the potatoes are boiling, cut up some fresh green beans. Cut the very tips off either end, then cut into thirds. When the potatoes seem to be nearly done, dump the green beans in to the same water as the potatoes, and continue boiling them together. Meanwhile, chop up some tomatoes. Put them in a big bowl. When the potatoes and green beans are done, drain them and plunk them in the same bowl as the tomatoes. Add pesto sauce on top and stir around. As the potatoes and green beans will still be warm, they will warm up the tomatoes and pesto nicely. Depending on your pesto, taste it first, you might want to add a bit of fresh-ground pepper. Serve it still warm, or room temperature. Absolute heaven! P.S.
