" Here's another one that doesn't exactly fit into the Kitchen Klutzes guidelines (four ingredients or less), but it is simple, cheap and good, so I'm thrilled to include: Kristine's Famous Baked Potato Soup Kristine says, " It is an easy recipe, and so good!!! I would be happy to have you put it on your web page, it is a much shared recipe, it has been all over and back. I am really not sure who created it. " 4 large potatoes 2/3 cup butter 2/3 cup flour 1 1/2 quarts milk salt & pepper 4 green onions 1 cup sour cream 2 cups cooked crisp bacon - crumbled (vegetarians can use veggie bits - Marga) 5 ounces grated cheddar cheese Preheat oven to 350 degrees F. Bake potatoes until fork tender. Melt butter in medium sauce pan. Blend in flour with a wire wisk until well blended. Add milk to mixture, stirring constantly. Add salt and pepper to taste, and simmer over low heat. Stir constantly. When potatoes are done, cut in half and scoop out the middle. Set skins aside. When milk mixture is very hot, mix in potatoes chopped green onions. Stir well, add sour cream and bacon. Heat thoroughly and add cheese a little at a time. Stir until melted. You can chop some of the peels and add them too. Or you can bake them with cheese and bacon on top. Potato skins are a great treat too! This soup is so filling! I hope you enjoy it like I do. I have also put diced carrots in it just to sneak a veggie in on my daughter. You can probably play around with this and make it how you want it.
