I am very much wanting to move myself and my blended meat eating pass on the veggie family to a more vegetarian way of living, but when I go to look for resources I'm overwhelmed and dont know were to begin. Guest guest Posted January 23, 2000 Report Share Posted January 23, 2000 When I started, I used one-dish casseroles as dinner, so I didn't worry about what to put on my plate in place of meat. ( I think a lot of ppl are like that, they wonder what a veggie can eat based on the way a traditional meat and potatoes diet is presented.) Once you get used to the different textures, and different types of food, it's much simpler. If you want a sandwich, have a sandwich with whatever you like on it. If you want soup, leave out the meat. If you want a meat substitute, eat eggplant or tofu or something packaged like soy burgers. You already eat lots of veggie meals, right? Looking back I would have said I made a decision to eat vegetarian, but in reality I think we were moving away from meat every day for simple frugal reasons first. I had already begun to serve bean and tofu dishes several nights a week just to save money, so when I made the choice to go veggie, it was just a matter of expanding on my menus to handle more nights of different meals. With all the soy substitutes out there now, it is so easy to eat many of your old family favorites with substitutions! For those meals that we used to eat that had ground beef in them, I now substitute either beef flavored TVP or those wonderful Morningstar Farms Burger Crumbles that look and taste like browned ground beef. My family doesn't complain at all! Try just expanding your menus a few meals each week more and more away from meat, all the while looking for new recipes or substitutions for your old favorites. Keep incorporating the new menus until you are completely away from eating meat. My family's favorite entree right now: Saute 1 cup onions in a little olive oil or water. Add chopped bell pepper to taste if available. Chop whatever other fresh veggies you have on hand...about 3/4 Cup of each of 2-3 veggies. We use broccoli, carrots, cabbage or whatever else is on hand. Add these to the softened onions. Add 1 1/2 C regular rice and 3 cups of vegetable flavored buillion. Stir and bring to a boil, turn down heat, cover and simmer until liquids are almost absorbed. Then add 3/4 C mild or medium chunky salsa. Stir together, then allow to finish cooking until liquids are absorbed. Add 1 can of light kidney beans. Top with " Better Than Sour Cream " (a tofu based sour cream). Salt to taste. (I make my own kidney beans from scratch, cooking until tender with onions and lots of garlic....much more flavor than canned!)
