I guarantee comments and compliments. 2 cups unsweetened apple cider 1 cup wild rice 6 tablespoons unsalted butter 1/2 cup sliced almonds 1/2 cup raisins 1/2 teaspoon cinnamon 1/4 teaspoon grated nutmeg salt and pepper to taste In a large saucepan, bring the cider and 1 1/2 cups water to a boil over a high heat. Once boiling, reduce the heat to a fairly low temperature and stir in the wild rice. Cover and allow to simmer until the rice is tender but still firm. This usually takes about 30 to 40 minutes. Once done, strain. In a large skillet over a medium heat, melt the butter and add the almonds and raisins. Cook, stirring often, until the almonds are a light brown color. Add the cinnamon, nutmeg, and salt and pepper. Stir in the wild rice and cook for another 5 minutes. Got a recipe you'd like to share with us? Send it to veggie_tips.
