German Covered Apple Cake

This recipe is REALLY yummy! Though it doesn't quite beat apple pie, it's

got a really nice texture, and the crust is SO good! The only person who

didn't like this was my mother, who just coincidentally happens to be

German. Hee hee! Ironic, isn't it? ;)

German Covered Apple Cake

DOUGH:

------

2 & 1/2 cups flour

1/2 cup sugar

1 teaspoon baking powder

1 teaspoon vanilla

1 egg

1 cup butter or margarine, cold

 

 

APPLE FILLING:

--------------

3 pounds apples, peeled, cored and sliced

1/3 cup sugar

1/2 cup water

2 slices lemon

 

 

GLAZE:

------

1 cup powdered sugar

1 tablespoon hot water

 

 

1) Sift flour and baking powder on a board or table.

2) Make a hole in the middle of the flour mixture, and put the sugar,

vanilla and egg in the hole and mix to a smooth consistency.

3) Add the cold butter the the flour mixture in small pieces and work

quickly until the dough forms a ball.

4) Use 3/4 of the dough for the bottom and sides of the cake (use a

9-inch springform pan). Set aside prepared pan and remaining dough.

5) Cook the apple slices with the sugar, water and lemon slice until

are tender but NOT mushy.

6) Drain and cool the precooked apples, and then remove the lemon

slices.

7) Fill the prepared cake pan with the precooked apples.

8) Put the remaining dough on top of the filling.

9) Bake at 350 to 375 degrees for 30 minutes.

 

When the cake is ALMOST COOLED, mix together the 1 cup of powdered

sugar and the 1 tablespoon of hot water, and spread this glaze mixture

on the cake.
