Guest guest Posted November 17, 1999 Report Share Posted November 17, 1999 These are very similar to the sour cream enchiladas served at Pancho's restaurants. * 7-8 corn tortillas (flour not recommended; wrong flavor/texture) * 15 oz tomatoes, blended into sauce with 1/2 tsp cumin, 1/4-1/2 tsp garlic pdr, and 1 tsp cilantro/coriander * ~ 4 oz mild cheese (monterrey jack, chihuahua, farmers) * up to a cup cottage cheese curds Preheat oven to 325 F. Spray 9x7x2 baking dish with cooking spray, then cover bottom with 3 or 4 tortillas. Layer sliced cheese. Dot and spread cottage cheese. Pour 1/2 sauce over dish, covering tortilla edges. Repeat.
