My Children's Favorite Cake!! We have 5 birthdays in a row and everyone

still wants this cake!!

>Whole Wheat Carrot Cake:

>2 cups shredded carrots (smallest saladmaster cone)

>1 cup shredded coconut

>1 cup chopped nuts (I blended to make smaller pieces)

>8 1/4 oz can crushed pineapple, drained (I blended to make smaller)

>1 cup oil

>1/2 cup raisens

>3 eggs, beaten

>1 1/2 cup maple syrup

>2 tsp vanilla

>2 cups whole wheat flour

>2 tsp baking soda

>1 tsp salt (I just used a dash.)

>2 tsp cinnamon

>Preheat oven to 350.

>Mix carrots, coconut, nuts, pineapple, oil, and raisens. Mix together

>eggs, sugar and vanilla. Add to first mixture. In separate bowl, mix

>flour, soda, salt and cinnamon. Add to first mixture and beat well. Bake

>in greased and floured 9X13 inch pan for one (1) hour.
