Shelly, N.D. >Whole Wheat Carrot Cake: > >2 cups shredded carrots (smallest saladmaster cone) >1 cup shredded coconut >1 cup chopped nuts (I blended to make smaller pieces) >8 1/4 oz can crushed pineapple, drained (I blended to make smaller) >1 cup oil >1/2 cup raisens >3 eggs, beaten >1 1/2 cup maple syrup >2 tsp vanilla >2 cups whole wheat flour >2 tsp baking soda >1 tsp salt (I just used a dash.) >2 tsp cinnamon > >Preheat oven to 350. > >Mix carrots, coconut, nuts, pineapple, oil, and raisens.
