Chocolate and Banana Muffins (did I already send this?)

Mmm...one of my favourite combos: chocolate and banana! This is

a delicious muffin, I think! Even my mom liked it, and she hates

that sort of chocolate and banana combo. In fact, she tasted the

batter before I stuck the muffins in the oven to bake, and she

thought it was really disgusting, but when they came out she was

forced to admit that they were quite good!

P.S. Oh yeah, I forgot to mention, this is another great way to

use up those bananas which you forgot about and have become

overripe!

 

 

Chocolate-Banana Muffins

Yield: 12 muffins.

 

 

2 cups mashed banana (about 4 medium bananas needed)

1 egg

1/3 cup vegetable oil

1 & 1/4 cups sugar

1/3 cup water

1/3 cup unsweetened cocoa powder, packed

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 teaspoon cinnamon

 

 

1) In a blender, combine the bananas, egg, oil, sugar, and water.

(I found that it doesn't matter how long you mix them together,

just as long as they get well mixed.)

2) In a large bowl, whisk together the cocoa, flour, baking soda,

baking powder, nutmeg, salt, and cinnamon.

3) Stir wet mixture into dry ingredients, mixing only until combined.

4) Spoon (see NOTE at bottom of recipe) batter into greased and

floured muffin tins (or can line the tins with paper bake cups)

2/3 full and bake for 20 to 25 minutes at 375 DEGREES or until

a toothpick inserted into the center comes out clean and dry.

 

Can turn the muffins out at any point, really. If like them piping

hot, then turn them out right after you take them out of the oven,

but if you like to wait a while, then let them cool for preferred

amount of time before turning out.

 

NOTE (from step #4): An easier way, I found, is to place the batter

back into the blender container, or at least

into some sort of pitcher, and POUR the batter

into the cups. It's much easier than messing

around with trying to spoon really drippy

batter into each individual cup.
