I have been interested in becoming a vegetarian for some time know. I have given up pork and all red meat. I still eat chicken and fish on occasion, but I am trying! Anyway, the reason I joined this list is because I wanted support from other vegetarians on eating healthy and eating quick vegetarian meals. I am always on the run and I usually don't have time to cook for myself. I usually end up eating fast food or candy on the run or just skipping meals all together. The quickest would be to go to your health food store (even some supermarkets have this) and go to the freezer section and get " amy's " frozen prodcuts....such as the pot pie which is good. I don't feel frozen is the best but it's certainly better than fast food or candy. Eat with a salad. Veggie salad, fruit salad, pasta salad, unique salad. Mkae use of all the different varieties of veggies. Some organic stores even have a deli section where u can pick up fresh prepared veggie burgers and salads and so on. You'll just need to heat the veggie burger and throw on roll with lettuce and tom. Or you can get the frozen ones. Check into it. You can also get something like fake bacon strips made from tempeh and whole grain bread and throw together a BLT. You can make your own varieties of veggie burgers and freeze for later. Use grains like millet or rice, boil and throw in some soy milk and dried fruit...like hot cereal. Or buy the 7 grain hot cereal. You can always make a quick grain and have with steamed veggies. And how bout vegetarian tacos....which require a bit more work, but not much. Heat canned kidney beans and plain canned tomato sauce. Put in taco shell with shredded cheese, chopped tomatoes, shredded lettuce, salsa, olives, or whatever you like. Or how about different smoothies? mix tofu, peaches, vanilla, mint, OJ. Or whatever in blender. Canned vegetarian lentil soup or other soups? whole grain pastas? Or, make stir fry by cutting up different veggies, and tofu, and throwing in with some water, soy sauce, and garlic and spices. mixed veggie sandwich. maybe grilled veggies with goat cheese? I really like hummus in a pita with steamed carrot strips and sugar snap peas, or even just lettuce and tomato. This is one of my favorites. I find it's great to always have hummus available. For snacks, have veggie sticks, fruit, nuts available to grab on the go. yogurts, soy or dairy. cottage cheese with fruit. I like making a sandwich with shredded carrot mixed with mashed banana, on whole grain bread with apple slices, lettuce and a mild dressing or lemon with seasoning. I also like to cut an avocado in half and put in tofu mock egg salad, or u can do egg salad, with french dressing or whatever. For breakfast I have a green superfood powder (i only like " team up's " , but i know others who prefer different ones) blended with banana, apple juice, flax oil or similar oil blend, and some powdered supplements. Sometimes I have this later on if I need something quick and energetic. Believe it or not, it tastes good, cause the banana makes it creamy. Well, this is a start. Hope it helps!
