Emmy Banana Nut Muffins ~~~~~~~~~~~~~~~~~~~~ 1/2 cup margarine, at room temperature 1 & 1/2 cups granulated sugar 2 cups well-mashed bananas (will need about 4 medium bananas) 2 eggs, beaten 1/2 cup buttermilk 2 & 1/2 cups all-purpose flour 1 teaspoon baking soda 1/2 teaspoon baking powder 1/4 teaspoon salt 1/4 cup chopped walnuts (or more, if preferred) 1) In a large mixing bowl, combine margarine and sugar until thoroughly blended. 2) Stir into the margarine and sugar mixture the mashed bananas, the eggs, and the buttermilk. 3) In another bowl, whisk together the flour, baking soda, baking powder and salt. 4) Stir wet ingredients into the dry, mixing until dry ingredients are moistened. 5) Blend in walnuts. 6) Spoon batter into greased and floured muffins pans (or can line them with baking cups) until 2/3 full. 7) Bake at 375 degrees for 15 to 20 minutes or until a toothpick inserted in the center comes out clean and dry, then remove from the oven. Can let them cool for 10 minutes before removing from the pans, but can also remove them while they are piping hot, just be sure to use hot pads!
