Guest guest Posted September 23, 1999 Report Share Posted September 23, 1999 i picked up a book at the used book store today ' the wholefood lunch box' it has a few good ideas, my favorite though is still the vegetarian lunchbasket sandwich suggestions cashew butter and sliced peach cheese coleslaw and caraway seeds banana honey and flaked almonds apple butter w/ raisins or banana (i love apple butter, peanut butter, banana sandwiches) apricot jam banana slices and walnuts cooked lentils mashed with onion and curry powder mashed banana , grated carrot, sprinkling of cocunut cream cheese and lightly crushed strawberries walnut bread by diamond is wonderful for sandwiches broccoli rice soup 3/4 lb broccoli, fresh or frozen 3/4 lb potatoes, pelled and diced 1 medium onion sliced 2 1/2 cupsful veggie stock 2 1/2 tablespoons margarine 1/4 cup brown rice seasoning to taste grated cheese (optional) break broccoli into florets place broccoli in saucepan w/ potatoes, onion and stock, bring to boil, simmer for 30 min. or until veggies are soft puree in blender and return to pan add margarine and rice and cook gently for 15-20 minutes until rice is cooked but not mushy season and serve with grated cheese on top Bean Chowder 1/2 cup baked beans 1 T veg. oil 1 large onion, sliced 2 1/2 cups veg stock 3 1/2 T tomato puree pinch of sugar pinch of dry mustard seasoning to taste parsley or soya bacon bits to garnish saute onion in oil add stock, puree, sugar, and mustard. cook for 10 minutes, add beans (drained). cook til heated thru Quote Link to comment Share on other sites More sharing options...
