Guest guest Posted September 21, 1999 Report Share Posted September 21, 1999 Chewy Chocolate and Cinnamon Cookies ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ (Makes approximately 2 to 3 dozen cookies, depending.) 6 tablespoons margarine, softened 2/3 cup brown sugar, packed 3 tablespoons granulated sugar, plus 1/4 cup (set aside) 1 egg 1 teaspoon baking soda 1/4 cup light corn syrup 1 teaspoon vanilla 1 & 1/2 cups flour 1/3 cup cocoa powder 1/4 to 1/2 teaspoon cinnamon 1) Preheat oven to 350 degrees. 2) Coat cookie sheet with either nonstick cooking spray or butter. 3) Combine 1/4 cup sugar with the cinnamon; set aside. 4) Combine margarine with brown sugar and the remaining 3 tablespoons of sugar; beat until blended. 5) Add egg, baking soda, corn syrup, and vanilla; beat well. 6) Stir together flour and cocoa; beat into margarine mixture. (If batter becomes stiff, use wooden spoon to stir in remaining flour.) 7) Cover; refrigerate for a short time if necessary, until batter is firm enough to shape. 8) Shape dough into 1-inch balls. 9) Roll balls in combined 1/4 cup sugar and cinnamon. 10) Place 2 inches apart on prepared cookie sheet. 11) Bake in preheated oven for 9 - 10 minutes until cookies are set and tops are cracked. 12) Cool slightly and then remove the cookies from the cookie sheet onto a wire rack to cool completely.
