I am 15 years old and LOVE cooking vegetarian food. Coming x it's great to see so many teenagers becoming vegetarians! Welcome, Emmy, this is a great list and I know you'll find good recipes here. x Title: Tex-Mex Caviar Categories: Low fat, Bean, Salad Yield: 4 servings 10 oz Package frozen black-eyed peas 1/4 c Chopped sweet red pepper [or green if that's what you have] 1/4 c Chopped sweet green bell pepper 1/4 c Chopped red onion 1 tb Chopped fresh jalapeno 2 tb Chopped parsley 1/4 c Italian dressing Rinse and drain cooked, cooled peas. Mix with other ingredients. x " Aliza R. Panitz " <buglady x Title: Three Bean Salad Categories: Low fat, Bean, Salad Yield: 4 servings x 2 cans Cut green beans, rinsed and drained 1 can Garbanzo beans, rinsed and drained 1 can Kidney beans, rinsed and drained 1 md Purple onion, chopped 2 md /lg. tomatoes, chopped 2 Cloves garlic, minced 1/2 Tb Dried thyme 1 ts Dried oregano 1 ts Dried basil Balsamic vinegar Combine the beans, vegetables, and herbs in a bowl. Pour balsamic vinegar over whole lot, cover, and chill. I'm not sure how much b. vinegar I use for this, but I would guess about 2 c. I cover the salad about 2/3 way. You could probably get by with less, but I like to let as much of it marinate as possible.
