I thought I would send it to you as well > so you could see the ideas. I love miso... I will get specifics before telling you the nutritional value...give me a day or two. I have used it as a base for baked things...for sauces for rice or pasta... Taste it...Think what would taste good with it...that is gennerally how I decide...if I try it and I was wrong...well > I try something else... grin It has more nutritional value when it is the type with seeweed in it. I get mine at the japanese market here...they often have more varieties avalible...but they are not all marked in english. I have grilled tofu with a little soy sauce and some herbs and put the slices on rce and put a slightly thickened miso soup on it...I liked it. I preffer white iso to the darker ones myself...but that is entirely personal prefference. it mixes well flavorwise into a number of creamy gravies or soups. I also will use it as the base for a soup and add tofu, vegetables and spices...changes it a lot but is quite good. I recommend sauteying the vegetables before adding...you could also steam them.
