creamy broccoli and cauliflower soup

 

3 medium potatoes chopped and peeled

into small cubes

 

1/3 cup chopped scallions

 

5 cups water

 

2 vegetarian vegetable bullion cubes

 

2

tablespoons raw garlic

 

1

teaspoon onion powder

 

1 cup

chopped broccoli

 

1 cup

chopped cauliflower

 

 

 

Put potatoes, green onion, water, bullion, garlic,

and onion powder into a raw pot

and boil. Simmer for around fifteen minutes until

the potatoes are well cooked.

Remove from heat and when at room temperature,

puree soup in food processor.

Return to pot adding the chopped broccoli and

cauliflower. Simmer for ten

minutes or until the vegetables are tender.
