Artichoke Pasta

 

This is a very simple, yet very tasty artichoke pasta dish!

 

Ingredients:

 

Choose any plain (non-flavored) pasta you like

2 cans of marinated artichokes

olive oil

minced or crushed garlic from a jar

one egg

 

Directions:

 

1.Cook pasta and drain.

2.Pour out most of the oil from the artichokes but leave about a third of

the marinade oil.

3.In a cooking pan, pour the artichokes and the marinade oil and mix with

1 teaspoon of garlic.

4.Lightly sautee the artichokes and break them apart.

5.Remove artichokes and set them aside in a separate bowl.

6.In the same cooking pan, pour enough light olive oil to provide a thin

coat at the bottom of the pan.

7.Add 3-4 teaspoons of garlic.

8.Mix pasta in the garlic oil mix and evenly distribute the garlic oil mix.

9.Add sauteed artichokes and evenly distribute them throughout the pasta.

10.Add one raw egg into the artichoke pasta and mix well into the pasta.

 

Serve hot and sprinkle parmesan on top.
