Guest guest Posted August 30, 1999 Report Share Posted August 30, 1999 First to give credit where it is due: This recipe comes from the cookbook " In The Kitchen with Rosie: Oprah's Favorite Recipes " by Rosie Daley. If you aren't particularly fond of mustard (I'm not, either), don't let this recipe scare you. I found the flavor delicious. Roasted Mustard Potatoes Light vegetable cooking spray 4 Tbsp. Dijon-style mustard 2 tsp. paprika 1 tsp. ground cumin 1 tsp. chili powder 1/8 tsp. cayenne pepper 16 baby red potatoes Preheat oven to 400 degrees. Spray roasting pan 3 times with veg. spray. Put all the ingrediants (except potatoes) in a large bowl. Whisk to blend. Prick the potatoes several times with the tines of a fork and add them to the bowl. Toss to coat the potatoes evenly. Pour the coated potatoes into the prepared roasting pan, leaving a little space between them. Bake for about 45 minutes to 1 hour, until the potatoes are fork tender. Serves 4 Fat per serving= 1.7 grams Calories per serving= 137 These are so good, you don't even want to put sour cream or butter on them! Off now, to eat my leftovers!
